Choc Chip Banana Pancakes

Our fluffy pancakes were prepared with our Pride of India Cinnamon Powder.

Enjoy with your favourite toppings such as seasonal fruit, syrup, honey, chocolate sauce, ice cream, cream or something savoury.

Serves 3-4.

2 ripe bananas

1 cup milk

2 large eggs, lightly beaten

¼ cup oil

1.5 cups plain flour

2.5 tsp baking powder

1 pinch of salt

2 tbps sugar (optional)

¾ cup choc chips

1 pinch of Pride of India Cinnamon Powder

Sift dry ingredients: flour, baking powder, salt, Pride of India Cinnamon Powder and sugar (if using). Mix well and set aside.

In a medium bowl, mash the bananas.  Add milk, eggs and oil.  Mix until combined.

Add the dry ingredients and mix until smooth.  Set aside for about 10 minutes.

Add choc chips and fold into batter.

Heat a lightly greased pan over medium heat.  Scoop approximately ¼ cup of batter onto the heated pan.

Cook on both sides until golden brown.

Sugar was omitted due to the natural sweetness of the ripe bananas.

However my children desired more sweetness, so choc chips were perfect for the additional sweetness.

If you opt to leave out the choc chips, then the sugar could be added.
