Crumbed Chicken

Make your own homemade signature Crumbs and Coatings mix using our range of Pride of India Dried Herbs and Seasonings.

They can be used to coat and fry fish cakes, crumbed chicken, crumbed prawns, chicken/fish strips, jalapeno poppers and cheese sticks.

We prepared our Lemon & Herb Crumbed Chicken using our Pride of India Lemon and Herb Seasoning, Thyme and Sage.

We sprinkled our Popcorn Cheese Flavouring over the creamy Mac & Cheese for added cheesy flavour.

Serves 4-6.

1kg chicken, cut into pieces

6 tbsp Pride of India Lemon and Herb Seasoning

2 tsp Pride of India Thyme

2 tsp Pride of India Sage

2 cups breadcrumbs

¾ cup plain flour, for chicken

2 large eggs, beaten

oil for frying

2 cups macaroni

3 tbsp plain flour, for cheese sauce

2.5 cups cheese of your choice, add more if desired

Pride of India Popcorn Cheese Flavouring

3 cups milk

2 tbsp butter

Steam chicken and add salt to taste.  Drain, cool and set aside.

In a bowl combine breadcrumbs, Pride of India Lemon and Herb Seasoning, Thyme and Sage. Add salt, if more is desired, and mix well.

Toss your chicken in flour.  Dip in egg.  Coat with your crumb mixture.

Fry in medium to hot oil until crispy and golden brown.

Remove from oil and transfer to a paper towel-lined tray to absorb the excess oil.

For the Mac & Cheese, boil macaroni in water, with salt to taste. Cook until al dente.  Drain well and set aside.

In a medium pan, melt butter on low heat.

Add flour and cook for about 1 minute.

Gradually add milk and mix well.

Simmer on low heat until the sauce thickens.

Remove from heat and add the macaroni and cheese.  Mix gently.

Add as much Pride of India Popcorn Cheese Flavouring as desired, for added cheesy flavour.

Serve and enjoy your Lemon & Herb Crumbed Chicken with creamy Mac and Cheese.
