Chicken Curry


This curry dish remains a popular item on many Indian food menus.

We prepared our spicy and aromatic Chicken Curry using our Pride of India Spices:

Chicken Masala, Cumin (Jeera) Powder, Garum Masala, Coriander (Dhania) Powder, Tumeric Powder, Star Anise, Bay Leaves & Fennel (Soomph) Seeds.


Serves 4-5.












5 tbsp oil

1 onion, finely sliced

2 Pride of India Star Anise

2 Pride of India Bay Leaves

1 tsp Pride of India Fennel (Soomph) Seeds

4 tsp Pride of India Chicken Masala

¼ tsp Pride of India Cumin (Jeera) Powder 

¼ tsp Pride of India Garum Masala 

¼ tsp Pride of India Coriander (Dhania) Powder

¼ tsp Pride of India Tumeric Powder

2 tsp ginger & garlic paste

1 tomato, chopped/pureed

1kg chicken, bone-in & cut into pieces

fresh coriander leaves, for garnishing





Heat oil in a medium pot.  Add Pride of India Star Anise, Bay Leaves & Fennel (Soomph) Seeds and fry for approximately 30 seconds.


Add onion and sauté until golden brown.


Add Pride of India Chicken Masala, Cumin (Jeera) Powder, Garum Masala, Coriander (Dhania) Powder, Tumeric Powder and ginger & garlic paste. Mix and fry for approximately 1 minute. Add a little water, if necessary.


Add tomato and cook for 2 minutes.


Add chicken and cook for approximately 8 minutes.


Season with salt. Add 1 cup of water. Let the chicken cook until tender.


Cook until the curry reaches a desired consistency. 


Once ready, garnish with fresh coriander leaves. 


Serve with rice or your choice of flatbread (roti, paratha, naan or puri).
