Salmon is a good source of protein and essential fatty acids.
We prepared our Pink Norwegian Salmon Soup with our Pride of India Garlic Flakes, Onion Flakes, Lemon Pepper Seasoning, Rosemary, Sage & Sea Salt. This soup serves as a perfect heartwarming appetizer.

Serves 4.
Pink Norwegian Salmon Soup

Notes:

Substitute pink norwegian salmon with other types of fish.
Cooking times will vary depending on the type of fish used.

Ingredients

  • 300g pink norwegian salmon fillet, skin removed
  • 1 potato, cleaned and cubed
  • 1 carrot, cleaned and cubed
  • 1 spring onion, finely chopped
  • ½ yellow bell pepper, cleaned and cubed
  • ½ red bell pepper, cleaned and cubed
  • ½ green bell pepper, cleaned and cubed
  • 1 green chilli, finely sliced
  • lemon juice, freshly squeezed from ½ a lemon
  • 4 tsp Pride of India Garlic Flakes
  • 4 tsp Pride of India Onion Flakes
  • 2 tbsp Pride of India Lemon Pepper Seasoning
  • 1 tsp Pride of India Rosemary
  • 1 tsp Pride of India Sage
  • Pride of India Sea Salt, to taste
  • 2 sprigs fresh dill
  • fresh dill, for garnishing
  • water

Method

  • Steam salmon for approximately 5 -8 minutes, or until salmon is cooked. Remove, drain and set aside.
  • In the remaining water, add the potato, carrot, spring onion, yellow/red/green bell peppers, green chilli and sprigs of fresh dill. Cook for approximately 5 minutes. Add 1 cup of water.
  • Add the Pride of India Garlic Flakes, Onion Flakes, Lemon Pepper Seasoning, Rosemary and Sage. Mix well.
  • Add Pride of India Sea Salt to taste. Cook for another 15 minutes or until the vegetables are tender.
  • Add more water if necessary and cook until the soup reaches a desired consistency. Remove from the stove.
  • Puree all the vegetables. Flake the steamed salmon and add to the soup. Add the lemon juice and mix gently.
  • Garnish with fresh dill.
  • Serve and enjoy with your favourite crusty bread.
