These potato boats are loaded with fish, beans and cheese.
It was prepared with our Pride of India Spices & Herbs: Pride of India Fish Masala, Pride of India Mixed Herbs, Pride of India Sea Salt and Pride of India Black Pepper Corns. This is a protein-rich dish and a good source of fibre.

Cheesy Sweet Potato Boats

Notes:

Substitute our filling with any filling of your choice and substitute Pride of India Fish Masala with our wide range of masalas, curry powders and seasonings.

Ingredients

  • 200g fish of your choice or half a can of tinned fish
  • 200g boiled beans of your choice or half a can of tinned beans
  • 2 large sweet potatoes, halved lengthwise and washed
  • 2 tbsp vegetable oil for the fish filling
  • 4 tbsp olive oil for the sweet potatoes
  • 1 onion, finely sliced
  • 1 tomato, grated/blended
  • 1 tsp ginger & garlic paste
  • 2 -3 cups grated cheese
  • 2 tsp Pride of India Fish Masala
  • 2 tsp Pride of India Mixed Herbs
  • Pride of India Black Pepper Corns
  • Pride of India Sea Salt
  • spring onions, for garnishing
  • water

Method

  • Heat vegetable oil in a pot. Sauté onion until golden brown.
  • Add Pride of India Fish Masala and ginger & garlic paste. Fry for approximately 1 minute. Add a little water, if necessary.
  • Add tomato, season with Pride of India Sea Salt and cook until soft.
  • Add fish and beans. Cook for about 5-7 minutes; if using tinned products.
  • If not using tinned products, you will need about 10-15 minutes.
  • Season with more Pride of India Sea Salt, if necessary.
  • Cook the curry until you have achieved your desired consistency.
  • Drizzle olive oil over the halved sweet potatoes. Season with Pride of India Sea Salt and Black Pepper Corns.
  • Grill until fully cooked.
  • Once ready, scoop out a little of the sweet potato from each potato boat; and set aside.
  • Layer each potato boat as follows:
    • Add some of the fish and bean filling. Add the sweet potato that was scooped out. Add remainder of the fish and bean filling.
    • Top with grated cheese followed by Pride of India Mixed Herbs.
  • Grill over medium heat until the cheese has melted.
  • Garnish with spring onions.
  • Serve and enjoy.
